Supper.

Baking chicken for the week while I work.

Supper last night. Wheat flour and bread crumb crusted and baked chicken wings, with sesame ginger quinoa. Had two tablespoons of light ranch dressing for dipping - delish! Finished up leftover veggies.

First time having quinoa and it was really good! Hubby didn’t mind it either. 

 

I have been madly craving this sandwich from a deli around here called Isaac’s (it’s called the Magpie in case you’re from Central PA and heard of it). It’s my favorite meal and has this amazing ranch pesto. It’s a flatbread sandwich with chicken, bacon, cheese, pesto, and spinach. I’m pretty sure the whole thing is about 1,000 calories because of it’s size, the bacon and the pesto/sauce.

So, I attempted the pesto myself as a clean version, although there is definitely a good bit of (heathly) fat in it! A lot of the oil you can see in this pic dripped out as I ate it which is also good.. haha

Anyway the pesto was spinach, a few onions, two garlic cloves, a tiny splash of fat free ranch dressing, less than a teaspoon of canola mayo, parsley, basil, olive oil, teaspoon of crumbled feta, and teaspoon of parmesan. Ground up in my mini food processor, done!

Re-heated some pre-cooked chicken breast and cut up some tomatoes and melted it all in a wheat tortilla. I also added a slice of fat free cheese which was pretty unnecessary but I really wanted the taste and this is still better than the real version. I calculated about 470 calories for the whole thing, which is still a better alternative and I could have gone less on the sauce.  I’m so satisfied and stoked that it tasted so close! 

Chicken fried rice with lots of broccoli and onions, and light soy sauce. Substituted olive oil for veg oil and went light in it…and tastes amazing.
